About Corsica Wine Bar
Raised in a rural community where access to fresh ingredients was shaped by season and geography, Chef Devin Rachles developed an early appreciation for food, its sourcing, and its origins. He entered the kitchen at seventeen as a dishwasher, continuing through college as he discovered a craft that offered both discipline and creative purpose. After refining his skills in Florida, Rachles moved to Colorado in 2019, deepening his connection to local sourcing through hands-on work across butcher, cheese, and prepared foods. A first visit to Barcelona Wine Bar in Denver sparked an immediate connection—he joined the team days later as Executive Sous Chef, later leading kitchens throughout the city before joining Corsica as Executive Chef. Chef Devin’s ingredient-driven menu blends French technique with Italian warmth, creating dishes that feel both transportive and familiar, with a lasting sense of place.
